Simple Chicken Noodle Soup

I was recently sick through the Thanksgiving holiday (not COVID sick, but good ol’ fashioned sick), and all I ate for weeks was chicken noodle soup. Thank goodness for Door Dash, because we had most of the soup delivered from either Panera or Chick-Fil-A. However, when I had a more energetic day, I made my own chicken noodle soup, which is my preference.

You really do not have to put too much thought into making homemade soup, and when you do not have homemade chicken stock on hand, just use store bought. This is a common staple in my pantry, because you can use it to make soups or gravy. I also use frozen veggies to save time. Can you cut your own veggies to add to the soup? Definintely! But when you are sick or want save time, frozen is perfectly fine.

Here is a simple recipe that I use all the time. You cannot beat quick and easy recipes. I do make a big vat of soup, so I can either freeze what we do not eat right away, or use the leftovers to create other dishes by turning the soup into a thicker gravy to create a chicken pot pie or serve it over mashed potatoes. I hope you give this recipe a try.

Ingredients

  • 3 Bonless skinless chicken breasts (cut into small chucks)

  • 1 TBSP extra virgin olive oil

  • 4 cups unsalted chicken stock

  • 16 oz bag of frozen mixed veggies

  • 1 cup of fine egg noodles
    (use more if you like a lot of noodles or use wider noodles)

  • Salt and pepper to taste

  • Optional herbs: Dried thyme, parsley, and basil

Directions

  • Season the cut chicken with salt and pepper.
  • Heat the oil in a large pot on Medium-High heat, and then add the chicken.
  • Cook the chicken until it is cooked through, stirring occasionally (about 7-10 minutes). You can add the optional herbs to the chicken, if desired)
  • Slowly add the chicken stock to the pot and heat for a couple minutes (add more optional herbs, if desired).
  • Add the bag of mixed veggies and cook until boiling.
  • Add the noodles, salt and pepper to taste, and cook for an additional 8 minutes.
  • Turn the heat to Low and simmer for a couple minutes. Then enjoy!

Side Note: If you happen to have leftover turkey from Thanksgiving, this recipe is great for a Simple Turkey Noodle Soup.
