Fall Veggies

I love the Fall. The colors, cool weather, and the veggies! Oh… and scarecrows. I don’t know why, but I love scarecrows. They are right up there with snowmen, although I am not so much a fan of snow. Go figure.

Beets

Some of my favorite Fall veggies that I grew in the garden this year are butternut squash, brussels sprouts, cabbage, beets, green beans, lima beans, and carrots. I cannot say that all of them were successfully grown this year, but that’s another story.

Green Beans

I will say that the green beans really took off this year. Not only are they amazing when blanched, then cooked in some garlic butter and lemon zest, but I do cook green beans and jar them to give to Mongo and Baxter as a puppy treat. Green beans are so much better for them than those high calorie dog treats, and they love them!

Lima Beans

Lima beans are another favorite that really did well this year. Lima beans are delicious on their own, but my favorite way to have them is adding them to beef stew. They give my beef stew some extra oomph and heartiness.

Butternut Squash

The butternut squash is still growing in the garden, which is AMAZING! Probably my favorite of the squash, because it can be used to make breakfast, lunch, dinner or dessert.

Roasted beets are an absolute favorite, and the best roasted beet dish that I have ever had was at The Salamander Resort, at the Gold Cup Wine Bar: Salted Roasted Beets with watercress, pistachio yogurt, and mint. So delicious. I loved it so much, I had it ever night I was there.

Simple Roasted Beets

Ingredients

  • 2 lbs garden fresh beets (cut into cubes)

  • 2 TBSP extra virgin olive oil

  • 1 tsp dried Basil

  • 1 tsp dried Thyme

  • 1 tsp dried Tarragon

  • Himalayan salt & pepper to taste

Directions

  • Preheat oven to 425 degrees
  • Put beets on a sheet pan in a single layer
  • Drizzle extra virgin olive oil over the beets
  • Sprinkle all herbs, salt, and pepper over the beets
  • Mix all ingredients together, so all of the beets are coated and spread out in a single layer.
  • Bake for 20 – 25 minutes
  • Enjoy the roasted beets hot or cold.
